11 Ingredients
  • 1 cup, Minced Red Bell Peppers

  • 1/2 Large Onion

  • 2 Garlic Cloves

  • 1/2 tablespoon, Oil - Olive

  • 1/2 tablespoon, Butter Salted

  • 16 oz, Baby Spinach

  • 12 large, Egg

  • 1 Tbsp, Heavy Cream

  • 3 oz, Part Skim Mozzarella

  • 1/2 cup, Lowfat Cottage Cheese

  • 2 oz, Sharp Cheddar Cheese

Prepare your Space:


Large Skillet

Large Mixing Bowl

Casserole Baking Dish

Preheat Oven to 350 Degrees


Mince

  • Onion

  • Bell Pepper

  • Garlic Cloves

Heat Skillet over Medium Heat and add

  • Butter

  • Olive Oil

Sautee

  • Onion

  • Bell Pepper

  • Garlic Cloves

  • Once Cooked, Add Spinach to Wilt

Remove Skillet from heat and allow to cool


In Large Mixing Bowl Combine (and Mix Thoroughly)

  • Shelled Eggs

  • Heavy Cream

  • Mozzarella

  • Cottage Cheese

  • Cooled "Skillet Content"

Pour everything into Greased (or Buttered) Baking Dish and Bake for 20 to 25 minutes, or until the middle is no longer "jiggly"

This will make 6 Servings and provides a healthy blood-sugar balancing breakfast for the week
