11 Ingredients

1 cup, Minced Red Bell Peppers
1/2 Large Onion
2 Garlic Cloves
1/2 tablespoon, Oil - Olive
1/2 tablespoon, Butter Salted
16 oz, Baby Spinach
12 large, Egg
1 Tbsp, Heavy Cream
3 oz, Part Skim Mozzarella
1/2 cup, Lowfat Cottage Cheese
2 oz, Sharp Cheddar Cheese

Prepare your Space:
Large Skillet
Large Mixing Bowl
Casserole Baking Dish
Preheat Oven to 350 Degrees
Mince
Onion
Bell Pepper
Garlic Cloves
Heat Skillet over Medium Heat and add
Butter
Olive Oil
Sautee
Onion
Bell Pepper
Garlic Cloves
Once Cooked, Add Spinach to Wilt
Remove Skillet from heat and allow to cool
In Large Mixing Bowl Combine (and Mix Thoroughly)
Shelled Eggs
Heavy Cream
Mozzarella
Cottage Cheese
Cooled "Skillet Content"
Pour everything into Greased (or Buttered) Baking Dish and Bake for 20 to 25 minutes, or until the middle is no longer "jiggly"
This will make 6 Servings and provides a healthy blood-sugar balancing breakfast for the week
